Apium graveolens var. rapaceum
Celeriac is a slow-growing biennial grown as an annual for its swollen, knobbly stem base. Sown under cover in early spring and planted out in late spring, it occupies the bed through summer and autumn before being harvested from October to late winter, never returning.
