Cichorium intybus
Chicory is a hardy perennial grown as an annual or biennial for its tight leafy heads, loose salad foliage, or roots lifted to force pale winter chicons. Sown outdoors from May to July, it occupies beds for four to eight months until harvested from autumn into winter, and is usually cleared rather than left to return.
