Beta vulgaris
Perpetual spinach is a biennial leaf beet grown as a cut-and-come-again crop for its tender green leaves and slender stems. Sown outdoors from March to August, it occupies ground for nine to twelve months, cropping steadily through summer and winter before running to seed the following spring.
