Tragopogon porrifolius
Salsify is a hardy biennial grown primarily for its long, slender taproot, though its young spring shoots and purple flowers are also edible. Seed is sown directly outdoors in April or May, occupying the ground through summer and winter until you harvest roots from October to March.
