Scorzonera hispanica
Scorzonera is a hardy perennial grown as an annual root vegetable for its long, dark taproots, though young spring shoots and flower buds are also gathered. Direct seed goes in from mid-April to May, occupies the ground right through winter as roots are dug on demand, and returns in year two if left unharvested.
