Pruning and cutting back

Pruning means cutting stems to stimulate fresh growth, maximise fruit and leaf yields, and prevent overcrowding. Cutting for a crop removes old, exhausted wood that will not fruit again, whereas cutting for shape opens up the plant centre to admit sunlight and airflow. The work runs from late winter through autumn, matching the cut to each plant's growth cycle.
