Earthing up means drawing surrounding soil into mounds or ridges around plant stems. It shields developing potato tubers from sunlight to prevent toxic greening, blanches leeks for longer white shanks, and anchors tall brassicas against stormy weather. The task runs from spring shoots in April through to autumn gales in October.
