Blanching crops

Blanching is the practice of excluding light from crops to stop bitterness and turn stems or leaves pale, crisp, and tender. It applies to leeks, celery, endive, chicory, and forced rhubarb. The job runs from midsummer for salads and celery through to late winter for forced roots.
